米・JUSTにて植物性の卵代替品や培養肉を開発し、代替タンパク質を含むフードテック全般の社外アドバイザーも兼務。
蘭・フローニンゲン大学、米・ベイラー医科大学、比・国連工業開発機関(UNIDO)での研究を経て、味の素等にて畜肉代替等の技術開発に従事。
京都大学農学部卒、農学研究科修士課程修了。京都府出身。
ユヌス・ソーシャルビジネスコンテストで優勝する等、社会課題、特にグローバルな栄養問題の解決にも情熱を注ぐ。
 
Aki Takino is a Food Scientist originally from Kyoto, Japan. He?currently develops plant-based egg and cell-based meat products at JUST in San Francisco.
After his experiences at the three prestigious institutes; the University of Groningen, Baylor College of Medicine, and the United Nations Industrial Development Organization (UNIDO), he worked for Ajinomoto to develop technologies of meat alternative, etc. He has a master's degree in Food Science from Kyoto University.
His passion is to solve social issues, especially the global nutrition problem - he previously won the first prize at Yunus & You Social Business Design Contest.
