京都府出身、京都大学農学部卒、京都大学大学院農学研究科修士課程修了。蘭・フローニンゲン大学、米・ベイラー医科大、比・国連工業開発機関(UNIDO)でのリサーチインターンを経て、味の素株式会社食品研究所にて研究開発に従事。渡米後は、JUSTにて卵代替品や培養肉など代替タンパク質の研究開発を担当。
研究職の傍ら、ユヌス&ユーソーシャルビジネスデザインコンテストにて優勝する等、社会課題、特に栄養問題を解決することに情熱を注いでおり、好きな食べ物はマンゴスチンとネクタリン。
 
Aki Takino is a Food Scientist from Kyoto, Japan. He has a master degree in Food Science from Kyoto University.
After his experiences as a research intern at the three institutions; the University of Groningen, Baylor College of Medicine, and the United Nations Industrial Development Organization (UNIDO), he worked for Ajinomoto as a food scientist. He moved to California, and he is now involved in the research and development of alternative protein such as egg alternative and cultured meat at JUST.
Besides his R&D job, he is also enthusiastic to solve social issues, especially the global nutrition problem - he previously won the first prize at Yunus & You Social Business Design Contest.
By the way, he likes mangosteens and nectarines.
