2015年、大学院在籍中にコークッキングを起業。2017年、慶應義塾大学大学院政策・メディア研究科修了。キッチンをクリエイティブなプラットフォームとして捉え、人々の創造性とコミュニティの多様性を促進する「未来の料理の場」の開発・研究をしている。コミュニティの対話と発想を活性化する手法「パターン・ランゲージ」のスペシャリストとして、キッチンや料理の可能性を拡げるしくみ・ツールの制作を日々行なっている。
2015年よりスローフード運動に参加。ユース東京支部の代表を経て、2016年より一般社団法人日本スローフード協会の理事に選任。世界のユース支部との連携や、食料廃棄問題に関するイベント規格、日本の先住民族の食文化発信に関するプロジェクトなど幅広く活動。2017年からはコークッキング社にて、食品ロス問題に挑むフードシェアリング事業「TABETE」の立ち上げに従事。日常の食事を通して、納得して食を選択する消費者や、それを支える事業者を応援したいという想いから、サービス設計やPRなど幅広く担当。対立構造や疲弊感を生まない、多様性と持続性のあるムーブメントのあり方を探している。
 
Taichi Isaku is the co-founder of CoCooking, a company which seeks to enhance the creativity, diversity, and well-being of communities through food and cooking. He is also a board member at Slow Food Nippon, the Japanese branch of the world’s largest nonprofit food movement that celebrates good, clean, and fair food.
Taichi is a specialist in the pattern language method and its application into the field of food and cooking. This is an approach to knowledge sharing that fosters the creativity and diversity of individuals and communities. By combining his skills and interests, he creates tools, places, and systems that would help anyone design a creative, ethical, and sustainable lifestyle.
Taichi is currently is working on the development of TABETE. Launched in 2018, TABETE is currently Japan’s largest food-sharing app that tackles the issue of food waste. From his personal passion to encourage responsible production and consumption, he is involved with the app's service design and branding. Through his challenges, he is searching for a sustainable way of social movements with minimal confrontation or sacrifices.
